Simply stated: Jailbreaking is the term for defeating Apple’s security that prevents unauthorized third party software from being loaded. Unlocking is the term for allowing a different SIM card to be used than the one that the phone was sold with. Jailbreaking usually precedes unlocking, although some countries require that cell phones be sold unlocked.
